Personally, my fav would have to be Shiki Tohno from the Nasuverse (Fate multiverse basically)
Shiki's character is a complete mystery to the audience but the deeper and deeper into the series that's when you start to understand why he behaves and acts the way that he does. His story does have a slight resemblance to that of Shirou Emiya, which I really like because Shirou is a pretty relateable character in my opinion
Shiki Tohno has similar abilities to Shiki Ryougi but the twist is his abilities are more potent, this also makes him a glass cannon. All of his fights are realistic and aren't one sided since the enemies he face are either as strong or way more stronger. He even has more abilities but I will not go into detail about that since that will spoil Tsukihime, Kagetsu Tohya, Melty Blood and Prelude.
Shiki Tohno has lore ties to the church from Fate/Stay Night, The Aozaki's from Mahoyo, and the demon hunters organization from Garden of Sinners.
